
Chickpea Salad with Lemon Vinaigrette

- In a large bowl, toss the chickpeas, tomatoes, cucumber, and shallot.
- Add the dill and feta cheese, gently toss to combine. Set aside.
- In a small bowl, add garlic, lemon juice, and Dijon mustard. Stream in the olive oil while whisking constantly to blend.
- Pour dressing over chickpea mixture and toss to evenly coat. Season with salt and pepper to taste.
- Cover and chill at least 30 minutes to allow the flavors to blend.
