- In a food processor, combine lemon juice, tahini, and olive oil. Process 1 minute or until well blended.
- Add 1/2 of the chickpeas, garlic, salt, cumin, and smoked paprika. Process 1-2 minutes until smooth, scraping down the sides of the bowl as needed.
- Add the remaining chickpeas and process again until smooth and creamy. If hummus is too thick, add 1-2 tablespoons of the liquid from chickpeas or cold water reach the desired consistency.
- Cover and refrigerate up to 5 days. Serve with crackers, pita chips, or veggies.
Notes
Roasted Garlic
Preheat oven to 400°F. To prepare the garlic for roasting, remove any loose outer skin, then cut the stem end off until the tops of the cloves are exposed. Drizzle evenly with olive oil and season with salt and pepper. Wrap the garlic in foil, then place in the oven for 45 - 60 minutes until cloves browned and softened.
How to Build a Hummus Board
Spread hummus evenly over on a serving platter, large plate, or cheese board, then garnish with toppings like crumbled feta cheese, olives, chopped tomatoes, chopped cucumber, fresh herbs, and a drizzle of olive oil. Serve with your favorite dippers. Hummus boards are great for feeding a crowd or build a personal-sized one for a quick lunch or satisfying snack.
