
Greek Whipped Cottage Cheese Dip

- Heat olive oil in a skillet over medium heat. Add the spinach and garlic; cook until wilted, about 3 minutes. Set aside.
- In the bowl of a food processor, blend the cottage cheese until smooth and creamy. Add the cooked spinach and 1/3 cup feta cheese; pulse just until blended.
- Transfer the whipped cottage cheese mixture to a shallow serving dish or pie plate. Top with tomatoes, cucumbers, olives, remaining 2 tablespoons feta cheese, red onion, and fresh dill.
- Serve with whole-grain pita bread or pita chips and fresh vegetables.
