Instructions

  1. Place the dates in the bowl of a food processor. Process until finely chopped, scraping the sides of the bowl as needed.
  2. Add the lemon juice and vanilla extract. Pulse just until blended.
  3. Add the oats, walnuts, 1 tablespoon of coconut flakes, collagen protein, lemon zest, and salt. Process up to 1 minute, or until the mixture is well combined, scraping down the bowl as needed.
  4. Place the remaining 2 tablespoons coconut flakes in a small bowl. Lightly moisten your hands with water to prevent sticking, then shape the mixture into 10 rounded tablespoon-sized bites. Roll each bite in the coconut flakes until coated. Refrigerate for up to 5 days.
