
Lemon-Coconut Energy Bites

Instructions
- Place the dates in the bowl of a food processor. Process until finely chopped, scraping the sides of the bowl as needed.
- Add the lemon juice and vanilla extract. Pulse just until blended.
- Add the oats, walnuts, 1 tablespoon of coconut flakes, collagen protein, lemon zest, and salt. Process up to 1 minute, or until the mixture is well combined, scraping down the bowl as needed.
- Place the remaining 2 tablespoons coconut flakes in a small bowl. Lightly moisten your hands with water to prevent sticking, then shape the mixture into 10 rounded tablespoon-sized bites. Roll each bite in the coconut flakes until coated. Refrigerate for up to 5 days.
