  1. In a large bowl, combine the oats, chia seeds, cinnamon, and salt.
  2. Stir in the milk, maple syrup, and vanilla extract.
  3. Fold in apple, carrot, raisins, and coconut flakes. Stir until well combined.
  4. Transfer the mixture to a resealable container, cover, and refrigerate for at least 6 hours or overnight. Top with pecans before serving. Store for up to 3 days.
