- In a large bowl, combine the oats, chia seeds, cinnamon, and salt.
- Stir in the milk, maple syrup, and vanilla extract.
- Fold in apple, carrot, raisins, and coconut flakes. Stir until well combined.
- Transfer the mixture to a resealable container, cover, and refrigerate for at least 6 hours or overnight. Top with pecans before serving. Store for up to 3 days.
