
Skillet Chicken Egg Roll Stir Fry

- Heat a large skillet over medium-low heat. Add 1 tablespoon of sesame oil, the white and light parts of the green onions, garlic, and ginger. Cook 3 minutes, or until softened, stirring occasionally.
- Add ground chicken to the skillet, breaking it up into crumbles with a wooden spoon. Cook 6-8 minutes until chicken is cooked through, no longer pink, stirring occasionally. Drain excess liquid if needed.
- Stir in hoisin sauce and crushed red pepper flakes. Cook 2 minutes.
- Add the coleslaw mix, remaining ½ teaspoon of sesame oil, soy sauce, and lime juice. Stir well to coat. Cook 5 minutes, or until the slaw is crisp-tender.
- Garnish with the green onion tops and chopped peanuts before serving.
Notes
Serving Suggestion: Serve over cooked aromatic jasmine rice or rice noodles.
