Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion and cook until translucent; about 4 minutes.
- Add garlic, carrots and celery; cook until softened and fragrant; about 5 minutes.
- Season with Italian seasoning, salt and pepper.
- Stir in beef stock, crushed tomatoes, diced tomatoes and kidney beans; bring to a boil, then reduce heat and simmer about 10 minutes.
- Add macaroni and kale; simmer until pasta is cooked through and kale is tender; about 12 minutes, stirring occasionally.
- Ladle soup into bowls and garnish with shaved Parmesan cheese.
