  1. Preheat oven to 375°F and lightly coat a small baking dish (8x8-inch or similar) with cooking spray.
  2. In a medium bowl, stir the cottage cheese, ¾ cup shredded cheese, spinach, garlic powder, and Italian seasoning until well combined.
  3. Spread the cottage cheese mixture evenly into the prepared baking dish.
  4. Spoon the pizza sauce evenly over the top, then sprinkle with remaining shredded cheese, tomatoes, and pepperoni.
  5. Place in the oven and bake 20–25 minutes, or until the cheese is melted and bubbly and the dip is heated through.
  6. Serve warm with whole-grain crackers, toasted pita, or sliced vegetables for dipping.
